You have to try these super easy and delicious campfire potatoes on your next camping trip!

Over the weekend we took our camper out on it’s maiden voyage! It was so much fun! I think honestly I had more fun than the kids did. It wasn’t all rainbows and butterflies however, the twins were having a bit of an issue in the tiny attitude area and it drove both Hubs and I bonkers! But that’s a story for another post.

Anyway, it being our first trip out, we didn’t realize that our grill for our outdoor kitchen didn’t come with a bracket attachment. This put a damper on dinner since we planned to grill all of our food. Guess we will check everything next time *facepalm*.

With that being said, we needed to figure out how to cook our dinner and not go buy food from the campground restaurant. Even if the quesadillas were calling my name. swoon!

Luckily, there was a family walking buy with what looked like a grate for a campfire and my eyes lit up! That’s it! We would just cook over the fire. I mean, I had seen my aunt do it 15 years prior and I have seen plenty of campfire recipes. So, up to the store I sent Hubs and we cooked over the campfire.

Cooking Over A Campfire

The first night we cooked hotdogs, since ya know, camp life. The next night we had he most delicious campfire potatoes and chicken. Ugh It was so dang delicious that I could have eaten everything I cooked myself!

I was also pretty proud that I myself cooked the entire meal and it turned out so good for my first time cooking over a fire. I will say, Hubs was the one that got the fire going so he did help haha.

Anyway, now that I got that story out of the way, let’s me show you how I made these delicious, tasty, so dang good potatoes over the campfire!

Campfire Potatoes

Ingredients

  • 3 Pounds Potatoes
  • 1 Stick Butter
  • Garlic Powder
  • Sea Salt
  • Rosemary Garlic Blend Seasoning
  • Shredded Cheddar Cheese
  • Sour Cream

  • Knives
  • Cutting Board
  • Fire Ring
  • Fire Pit Grate

Directions

Start by getting a fire going. You are going to want the fire to be hot but you don’t want tall flames to be shoot up through the grate.

While the fire is simmering down, cut and prep your potatoes. I used a 3 pound bag of potatoes. I just diced up the potatoes and threw them in some tin foil. About a cup and a half to two cups per pack got me 4 tin foil packs of potatoes.

Then I did about 4 pats of butter on each set of potatoes and seasoned away.

For these potatoes I used course sea salt, lots of garlic powder, and a rosemary garlic blend I got from Aldi.

Then I wrapped the packs up pretty tightly with tin foil and made sure to add extra foil around the opening so that I could flip the potatoes on the grate.

I then cooked the potatoes for about 40 minutes over the fire, making sure to move the packs around so they weren’t over an open flame. I really tried to keep them around the edge of the grate so that the potatoes would cook without being burned.

Once the potatoes were done, I opened them up and sprinkled some cheese and added a dollop of sour cream.

If I were to make these again, which I know I will, I’ll add some bacon or maybe some peppers and onions, or even green onion. These were so easy to make and can be so versatile!

This served 4 people and we had plenty left over for another dinner.
