I am a huge fan of easy and delicious sheet pan recipes and this one was one for the books!
One pan recipes are really like the unicorn of recipes. There is nothing better than just throwing everything onto a pan, throwing it into the oven and in a half hour you have a delicious and healthy dinner ready to be devoured.
Sheet pan recipes are also so easy because you really cant go wrong.
An easy way to clean out the fridge is to take all the random veggies you have and throw them on a pan with some avocado oil, salt, pepper, a little garlic powder, and meat of choice. Throw it in the oven for 30 minutes and dinners done.
Super easy, simple, and delicious without a huge mess.
I’ve been making these kinds of meal for years.
Although, when I first started I didn’t love vegetables the way I do now, so I would throw handfuls of cheese and sour cream on top to make it bearable to get down.
Luckily, I learned how to cook, season foods properly, and my love for veggies have expanded tenfold.
This particular tray I used:
- Italian Chicken Sausage
- Bacon
- Fresh Brussel Sprouts
- Red Bell Peppers
- Sweet Potatoes
- Kale
- Salt, Pepper, Garlic Powder, Paprika
- Avocado Oil
You really can’t go wrong and you can use whatever meat you want. Chicken thighs, chicken breast, steak, pork chops, really the possibilities are endless. All you have to do is make sure the meat is cooked through all the way and usually its about 30 – 40 minutes.
This is also a really easy meal prep idea if you like to prep lunches for the week, or you could even make a freezer meal out of it by prepping it all then throwing it into a freezer zip lock bag and into the freezer.
I’m telling you this is a winner for sure – winner winner chicken dinner!
Sheet Pan Chicken Sausage and Veggies
- 3 Chicken Sausage Links
- 1 Cup Chopped Bacon – Uncooked
- 2 Large Sweet Potatoes
- Whole Red Bell Pepper
- Whole Fresh Brussel Sprouts
- 2 Cups Fresh Kale
- Salt
- Pepper
- Garlic Powder
- Paprika
- 3-4 Tablespoons Avocado Oil
Directions
- Preheat oven to 400 and line baking sheet with foil.
- Start with the veggies and chop into bite size pieces, brussels just cut in half.
- Slice the chicken sausage into even pieces and chop bacon into bits.
- Toss all veggies evenly on tray, top with kale, and then add the chicken sausage and bacon bits.
- Drizzle Avocado oil and seasonings over all ingredients so everything is evenly coated but not drenched.
- Bake in oven for 30 minutes or until meat it cooked through – scraping bottom of pan about half way through so nothing burns.
- Enjoy!
