Over the weekend we had a small family cookout for an unofficial start of Summer. I made my keto-fied deviled eggs and these super easy pepper poppers with bacon! They were so good I had to share how I made them!

Easy Pepper Poppers with Bacon

These pepper poppers are a great appetizer for any get together or even just for a quick snack! I love paring these with a wrap for lunch and are great for getting some extra fat when when doing keto!

Of course, the more famous cousin of these pepper poppers are the jalapeƱo poppers. Same thing just without any added kick that may or may not be involved, so these are even a great snack for kiddos!

Again, these are so super simple to whip up and keep in the fridge for a few days after. Definitely recommend for any summer get together!

Side note: if you have guests that don’t enjoy bacon as much as you, these are still great without the bacon. Some green onion would be a great topper – I wish I would have thought of that when I made them! Dang!

All ready just need to stick in the oven for a few minutes to warm everything up!

Easy Pepper Poppers with Bacon

This recipe took about 30 minutes to complete from the cutting of peppers to sticking them into the oven.

Ingredients:

  • 1 Bag mini sweet peppers
  • 12 oz Cream cheese at room temperature = a block and a half of cream cheese
  • 1 1/2 TBS garlic powder
  • 4 Slices cooked bacon
  • Shredded cheddar cheese for topping

Directions:

Cook bacon until done and set aside. Preheat oven to 400 degrees.

Cut peppers in half and clean the seeds and stems out. Set aside.

Mix your garlic powder and room temperature cream cheese until combined and smooth. Once mixed, you are going to use about a tablespoon or so and “stuff” the peppers.

Once all the peppers are “stuffed” sprinkle your cooked bacon and cheddar cheese over top and stick in the oven for about 10 minutes.

Be sure to keep an eye on the peppers as you don’t want anything to burn. Just enough to get the cheese to melt and make everything gooey. Serve immediately. Also tasty chilled.

This recipe made one standard sized cookie sheet full of poppers – one bag of peppers = one cookie sheet
