I cubed these potatoes up and threw them in the air fryer just because I was in a hurry and needed something quick. I had no idea they would turn out this delicious! My husband said they were similar to the fresh french fries from the fair. I’d take that as a compliment any day!

The Best Side Dish

Hands down potatoes are the best side dish. You can’t tell me otherwise! Mashed, fried, baked, grilled, potatoes in all forms are amazing to me and I can’t get enough.

When I made these air fried potatoes, I was actually scrambling to get a side dish ready to go along with our steak dinner. What goes best with steak other than a salad and potatoes? Nothing.

With how incredible these turned out, I wanted to share with you all how I made them so you too can enjoy just how dang good these are!

Easy Potato Recipe

I started by grabbing my organic red skinned potatoes I got in my Misfits box and washed them up.

I then halved the potatoes and then halved again. There was a total of about 4 cups or so when I was done and I put them in the air fryer with a heat setting of 390.

This is the air fryer I have if you are looking for one.

Once in the air fryer, I coated the potatoes with a light coating of olive oil and seasoned them with salt, pepper, and garlic powder. Make sure to shake the bucket and toss the potatoes around so that they are evenly coated with oil and seasonings.

I then set the time for 12 minutes and let the air fryer do its thing, shaking the bucket once around the 7 minute mark. When the 12 minutes were up, I didn’t think they were quite ready to plate up so I added an extra 5 minutes and they were perfect!

Perfectly crispy on the outside but soft and creamy on the inside. So, so delicious!

I also added a bit of freshly shredded cheddar cheese and let that melt for 2 minutes before I put them on a plate and topped mine with some sour cream and chives from the garden.

My husband only had some chives added on top and he loved them. His comment was “these taste almost like the fresh french fries from the fair” which I’ll take as a compliment!

Toppings

As always, potatoes go so well with toppings of all kinds! The potatoes are great as is but if you wanted you could turn them into some loaded potatoes with cheese, sour cream, bacon, chives. Yum!

But also top it with some chili and cheese, or broccoli and cheese.

Some bacon and chives would be delicious.

I think these potatoes would also go great with some chicken, peppers, onions, and asparagus. Before the potatoes are done through in your veggies and maybe some rotisserie chicken. Oh wow my mouth is starting to water just thinking about it.


These potatoes are delicious and highly recommend trying them especially if you need a quick side dish to throw together. Super simple, under 20 minutes, and hardly any clean up, you really can’t go wrong!

Air Fried Red Skinned Potatoes In Under 20 Minutes

You know I love my potatoes and these ones are making my list of favorite ways to make them. This recipe is really so simple to make and clean up is almost nonexistent. In less than 20 minutes you will have crispy on the outside and creamy on the inside air fried potatoes that will have you craving more!

Equipment

  • 4 cups Organic Red Skinned Potatoes quartered
  • 1-2 TBS Olive or Avocado Oil
  • Salt to taste
  • Pepper to taste
  • Garlic Powder to taste

Instructions
 

  • Start by washing and quartering your potatoes and setting air fryer to 390 for 3 minutes to heat up
  • When the air fryer has heated through, carefully add potatoes to the bucket and coat with the oil and seasonings. Give the bucket a good shake to evenly cover all the potatoes
  • Start your air fryer and set the timer for 17 minutes. Shaking the bucket about every 5 minutes to evenly cook the potatoes
  • Onces the potatoes are tan to golden brown in color they are done. Top with your favorite toppings and enjoy!
