Infused Simple Syrup
Simple syrup really is simple to make. When I first learned how to make it, I couldn’t believe I had actually paid for a bottle of it instead of making it it myself.
To make simple syrup, simply add equal parts water and sugar, if you use one cup water you want to add one cup sugar, to a pot and bring to a boil. Let it boil for just a few minutes until all the sugar is dissolved and then let simmer until it has reduced by half. That’s it!
To make an infused simple syrup you just add an extra step.
To make an infused simple syrup, take whatever flavor you want to use be it dandelions, lilacs, wild violets, rosemary, strawberries, etc and cover with water. You want enough water so that whatever you are using is completely covered. Then allow it to sit for at least 24 hours.
When the 24 hours are up, you will strain the now infused water and use when you are doing your equal parts water and sugar.
Making flower infused simple syrup is so effortless and so fun for the kids to help with.
Foraging Plants
When foraging for dandelions or any plants you are going to be using for food or medicinal purposes, there are a few things you want to keep in mind.
You do not want to use plants that have been sprayed with chemicals such as weed killer or fertilizer.
You also want to choose an area where your pets or livestock have been using it as a bathroom.
I also recommend having an app or book with you to identify plants. There are many plants that look like what you’re looking for an end up being something different that could very well make you incredibly ill.
Storing Simple Syrup
When your simple syrup has reduced by half, you can carefully ladle the hot syrup into a mason jar or glass bottle.
I prefer to use a mason jar and ladle the hot syrup into the jar and place the lid and ring on tight. Then, I flip the jars upside down so that the heat creates a seal on the jars. This way they will be shelf stable for a couple weeks. Although they will last much longer in the refrigerator.
This method is not the same as water bath or pressure canning and does not create a true seal.
How to use Simple Syrup
We absolutely love using dandelion syrup and wild violet syrup in fresh lemonade. It is a highlight for my kiddos in the springtime.
You can use your infused simple syrup for lemonade, muffins, cookies, cakes, tea, rosemary infused simple syrup would be delicious added to a cocktail. It really is for whatever your heart desires.
If you want to get really crazy, you can make some infused coffee syrups like mocha or vanilla bean. I have made mocha coffee syrup and it is absolutely delicious in coffee with a little heavy whipping cream. I’ll have to share that recipe soon.
If you make infused simple syrup, please share with me what your favorite flavors are. This year we are hoping the late snow doesn’t stunt our lilac blooms again so we can try lilac infused syrup. And I personally can’t wait to have some lavender ready to use, I have so many ideas for my lavender this year! swoon!
