Hearty Breakfast

One of our favorite “big breakfasts” is sausage gravy. It is so delicious, hearty and super filling! This recipe will leave you full for hours and then have you craving more.

Sausage gravy was one of the first meals I had learned to cook from scratch. If you are wanting to learn how to cook from scratch, start with your sauces and gravy’s. This recipe is just sausage, flour, and milk with optional seasonings. Super simple and you will never want to go back to premade cans of sausage gravy or packets.

Here’s What You Need:

  • 1 pound of breakfast sausage – sage works well
  • 1/4 cup of flour – I’ve used gluten free and regular
  • 4 cups of milk – almond milk or whole milk – if you used almond make sure its unsweetened
  • Black Pepper
  • Seasoned Salt
  • Smoked Paprika
  • Parsley
  • Deep sided skillet – cast iron works really well but not necessary
  • Wooden or silicone spoon

Here’s What To Do:

Start by browning the breakfast sausage over medium heat.

Once the sausage has browned, without draining the grease, you will add the 1/4 cup of flour to the sausage making sure that the meat is covered with the flour. You want the flour to soak up the grease and stick to the sausage.

If there is still a good amount of grease left in the pan you can add a little more flour, starting with one tablespoon at a time.

When the flour has soaked up the grease and coated the sausage, you will pour in the milk and turn the heat to high. Bring the milk to a boil being sure to stir the entire time so you do not burn the milk.

Once the milk has started to boil, you can reduce the heat to a low simmer, continuing to stir for about 5-10 minutes or until the milk has thickened.

When the milk has thickened, you can stir in your seasonings and serve over biscuits.

Biscuits or Toast?

I know most recipes call for sausage gravy to be spread over biscuits, and this is probably a sin but in our house we prefer toast!

I grew up with always having sausage gravy poured over buttered toast so that is how I serve it up to my family now. However if you want a real treat try sausage gravy over sourdough toast!

Holy moly this sausage gravy was divine over my homemade sourdough! I cant recommend it enough!

Toast

A perk to eating your sausage gravy over toast is that you can easily pick it up and eat it with your hands and eat it. We did this last summer when I cooked sausage gravy over the fire and then ate it over toast. We didn’t have to waste paper plates and it a was a super easy clean up.

Storage

I have made this recipe probably close to a million times and it never gets old. If you find that you have left overs, you can easily store it in an airtight container for up to 3 days in the refrigerator. I love being able to heat this homemade goodness up and eating it over toast or even just simply mixing it with eggs.

I would venture to say that you could freeze any leftovers and use at a later time but I haven’t done this yet so use your best judgement.

Sausage Gravy

Skip the seasoning packets or cans of premade sausage gravy and make this delicious 20 minute sausage gravy recipe from scratch!
Cook Time 20 minutes
Servings 6 People

Ingredients
  

  • 1 pound Breakfast Sausage
  • 1/4 cup Flour
  • 4 cups Whole Milk
  • Black Pepper to taste
  • Seasoned Salt to taste
  • Paprika to taste
  • Parsely to taste

Instructions
 

  • In a deep sided skillet, brown sausage over medium heat. Do not drain.
  • Once sausage is browned, mix in the flour being sure to soak up all the grease and coating the sausage.
  • Add in the milk, turn the heat to high and bring to a boil stirring the whole time.
  • Once boiling, reduce heat to a low simmer continuing to stir for 5 – 10 minutes until thickened.
  • Add in seasonings and serve over biscuits or buttered toast.

Notes

You want the flour to soak up the sausage grease before you add the milk. If there is still a good amount of grease in the pan, you can add more flour starting with 1 tablespoon at a time. 
Make sure to stir continuously once you add the milk to the pan so that it does not burn on the bottom. 
Gluten free flour works well with this recipe as does almond milk – be sure to use unsweetened milk.
