You have got to try this Low Carb Chicken Salad Sandwich that I can literally just eat with a spoon! It is so dang tasty and I have been making it for years now.

Growing up I hated literally any kind of salad there was.

Now, I love salads of all kinds. Summer salad, fruit salad, mayo based salads. Basically, my taste buds have matured drastically and I’m a lover of salads.

So, when I was a few years younger, my cousin made us chicken salad sandwiches and at that time I was still iffy with anything mayo based.

However, after watching her make it, I noticed I liked everything she had added to it so I tried it. Low and behold it was delicious!

Since then, I came up with my own version and it is so dang good!

Low Carb Chicken Salad

Usually, I love to make this with left over grilled chicken, but really any kind of chicken works. For this version, I used rotisserie chicken.

I do like to stay away from any kind of baked chicken, unless it is thighs. Personally, I just don’t care for baked chicken breast as it just doesn’t work for this, in my opinion. Grilled, however, works great!

I know usually, chicken salad has grapes and pecans and is on the sweeter side. My version is more of a savory flavor I would say.

This recipe is really so simple and you just throw everything together in a bowl to mix.

I start by dicing up my chicken, onion, red pepper, spinach, and celery and just throw it in a medium size bowl.

Next, I will add in my mayo and seasonings and mix it up.

Super, super, simple and quick!

I will say that I don’t measure my seasonings so you will have to use your best judgement. I like to try a bite of it before I serve it to make sure it’s not too salty or dilly.

And yes, I use dill in my chicken salad because it just gives it such a great, fresh flavor.

Side Note: I have tried many different mayos with this chicken salad, and they all work perfectly. Avocado mayo, olive oil mayo, Just dairy free mayo, Hellmans, they all work so don’t worry about the brand or oil base.

Once it is all mixed up, I like to use a slice of colby jack cheese, and layer it on low carb bread, lettuce, or a low carb wrap. It is so dang tasty! I have been known to just eat it with a spoon right out of the bowl.

Ingredients

  • 2 cups Diced Chicken
  • 1/2 cup Red Pepper
  • 1/2 cup Celery
  • 1/4 cup Red Onion
  • Good Handful of Spinach
  • 1/2 – 1 cup Mayo
  • Salt
  • Garlic Powder
  • Dill
  • Paprika

Directions

  1. Start by dicing up chicken, celery, pepper, spinach, and onion. Add to a medium size bowl.
  2. Next, add in small amounts of mayo until it reaches the desired consistency (wetness).
  3. Add in salt, garlic powder, dill, paprika, mix and taste test. Start with a teaspoon of each and add more as needed.
  4. Serve on low carb bread, lettuce wrap, or low carb tortilla wrap.
